On my newest Sambar I’ve got peeling (paint? rubber?) trim on the external window trim. Does anyone know what material this is so I can restore it properly?

Hmm, that is more than just peeling, that looks like something took a gouge out of it.

I think it’s the angle. The passenger side has stuff like that too. I need to strip it down and repair it but not sure what to use to repair with.

Anybody know how to get that trim piece off?

Once you get it off, I'd say sand it down to bare metal, give it a base coat with POR 15 (or equivalent) then top coat it with black semi gloss SEM (brand) Trim paint. You can get it in a rattle can. Great paint.
