While attempting to replace the water pump and timing belt, I managed to snap off the crankshaft bolt.
Is there a way to remove and replace the crankshaft without pulling the whole engine?

I would look for a slightly smaller nut, and plug weld it to the remaining bolt, The heating of the weld, and subsequent cooling should loosen the bolt enough to remove it. You have nothing to lose, as the crank is already pooched.
